Junior Sous Chef

We are looking for a talented Junior Sous Chef to join our pre-opening team.
The role will report to the Sous Chef and Executive Chef.
Conveniently located adjacent to Rome Termini Station and a short distance from the Colosseum, the 238-room Hyatt Regency Rome Central is a contemporary 5-star hotel offering premium business services and one of Italy’s most dazzling leisure rooftop experiences.
The hotel is also featuring a SPA, 5 food & beverages outlets and more than 1000 sqm events venues.
Main duties and responsibilities:
- Assist in food preparation and collaborate with the Sous Chef / Executive Chef.
- Support the creation, tasting and implementation of food menus and buffets.
- Produce high quality dishes and buffets for customers in both, design and taste.
- Oversee and supervise the kitchen staff and food production.
- Check daily MEP to ensure sufficiency while focusing on cost and waste management.
- Spot check recipe compliance and update where necessary.
- Assist with inventory, ordering, supplier relationships and management of supplies.
- Comply with hotel security, fire regulations, all health and safety and food safety regulations in accordance to local legislation and laws.
- Report maintenance, hygiene and hazard issues.
- Able to support kitchen operation during high volume.
- Ensure the quality of food served.
- Offer suggestions and creative ideas to improve kitchen performance, menu optimization and service levels.
- Monitor and maintain the kitchen equipment and report damages, follow up on repairs or replacement.
- Keep workstations clean and sanitized and comply with food safety standards.
- Lead by example to deliver effective and efficient dining experience.
- Establish professional relationship with the team and provide educational support to develop skills and talents.
Skills and requirements:
- Minimum 3 years of experience in a similar role within an international kitchen environment.
- Knowledge of Asian fusion cuisine is an advantage.
- Excellent communication skills in both Italian and English.
- Proficient in using kitchen management systems and standard computer applications.
- Experience in coordinating medium- to large-sized banqueting events.
- Strong organizational, time management and leadership skills.
- Solid understanding of HACCP, food hygiene and local safety regulations.
- Work weekends, holidays and on shifts when required.
