About Us

We are about to inaugurate an exclusive luxury hospitality venue in the heart of Florence, set within a prestigious former Florentine convent. The complex will include a high-end hotel, a top-tier spa – the largest in the city – and two complementary dining concepts:

  • A gourmet evening restaurant open to both hotel guests and external clientele
  • A dynamic bistro serving breakfast through light lunch, with bar service and options for private events and cocktails


Role Description


We are seeking an experienced and motivated Restaurant Manager , responsible for the operational, organizational, and strategic management of the property’s entire food & beverage offering. This role will play a key part during the pre-opening phase, team building, and the establishment of service standards.


Key Responsibilities

  • Oversee and coordinate the activities of the gourmet restaurant, the bistro (breakfast, lunch, bar), and external events
  • Define and ensure excellent service standards, in line with the luxury positioning of the venue
  • Collaborate with the chef to define the culinary offerings
  • Curate every detail of the guest experience to ensure a high level of satisfaction
  • Recruit, train, and manage the front-of-house team (maître, waitstaff, bartenders, runners)
  • Monitor costs, margins, food & beverage cost, and contribute to budget planning
  • Manage reservations and the flow of internal and external guests
  • Coordinate with other departments (reception, events, spa, marketing)
  • Contribute to the promotion of the restaurant and bistro (events, PR, social media)


Requirements

  • Proven experience (minimum 3 years) as a Restaurant Manager or Maître in luxury venues, boutique hotels, or fine dining restaurants
  • Leadership, strategic vision, and a strong commitment to service excellence
  • Excellent organizational, interpersonal, and problem-solving skills
  • Fluent in Italian and English (a third language is a plus)
  • Knowledge of food cost dynamics, inventory management, and F&B management software
  • Availability to work in shifts, including weekends and holidays
  • Positive attitude, polished demeanor, and passion for hospitality
